Benefits of Frozen Fish and False Myths

Much of the frozen fish is caught at sea and processed on the same ship, i.e. the ultra-fresh fish just out of the sea is gutted and subjected to temperatures below -40ºC, this allows a very fast freezing that prevents the formation of crystals, thus helping to preserve the texture of the fish. In addition, with this rapid and instantaneous freezing, the risk of Anisakis and other parasites that affect fish is eliminated.


This procedure also reduces natural oxidation and preserves freshness, preventing microbial growth and nutrient loss. In fact, this product often offers a higher nutritional quality than the fresh fish that can be found in the markets.



So, in fact, if the frozen fish has respected the cold chain, it is a fresher fish than much of the fish sold as fresh, which retains intact most of its nutrients, although in some cases freezing destroys some vitamins, frozen fish ends up being equal or safer than fresh fish.


On the other hand, as far as price is concerned, frozen fish is generally lower, but this does not depend at all on its quality. The possibility of using and consuming this product throughout the year, regardless of the season, means that its cost is not subject to fluctuations due to higher demand and lower supply depending on the season.
